1 Avocado, pitted and sliced
1 Lemon or Meyer Lemon, juiced
1/2 Tbsp. Vinegar
2 Green Zucchini, shaved into ribbons
2 Tbsp. Pepitas
2 oz. Queso Fresco, crumbled
3 Tbsp. Olive Oil
4 Tbsp. Cilantro, chopped
Pepper to taste
Salt to taste
In a large mixing bowl, sprinkle a pinch of salt over the shaved zucchini and stir until combined. Set aside to sweat for 5 minutes. Meanwhile in a mixing bowl, whisk together the oil and vinegar along with the cilantro and lemon juice. Season with a pinch of pepper to taste. Pour the dressing over the zucchini and stir until combined. Season with salt to taste. Divide between 4 plates and garnish evenly with the avocado, queso fresco, and pepitas.
