1 bunch Parsley, stems removed, finely chopped
1 lb Oca Tubers
2 Tbsp Capers, roughly chopped
Salt, to taste
¼ cup Almonds, roughly chopped
¼ cup Apple Cider Vinegar or Pear Vinegar
¼ cup Olive Oil, plus more for roasting
Preheat the oven to 375°F.
Halve the oca tubers lengthwise and spread them on a baking sheet. Toss with olive oil and a sprinkle of salt. Roast until soft and golden brown around the edges, about 40 minutes.
Meanwhile, spread the chopped almonds on a separate baking sheet and broil until lightly browned and fragrant. Let cool.
In a bowl, mix the chopped parsley, capers, olive oil, and apple cider vinegar. Stir in the toasted almonds and season with salt to taste.
Transfer the roasted oca tubers to a serving platter and drizzle with the almond caper green sauce. Serve warm.
