1 1/2 cup Sugar
1 pint Strawberries, roughly chopped
1 quart Apple Cider Vinegar
To make simple syrup, combine the sugar and water over low heat in a small saucepan. Stir until all sugar is completely dissolved. Set aside to cool.
For the shrub, in a medium saucepan over medium heat, combine the strawberries and vinegar. Bring to a boil and remove from the heat. When cool, add 1 cup simple syrup. Pour the mixture through a strainer, pressing on any fruit with the back of a large spoon.
Use the Shrub for an amazing summertime drink. Mix 2 parts Gin or Vodka with 1 part Strawberry Shrub and 1 part Simple Syrup. Shake with ice and serve in a rocks glass. Garnish with fresh strawberries, lemon wedges and mint sprigs. Or try a nonalcoholic version by substituting seltzer for the alcohol with a ratio of 4:1:1. Use the shrub in a strawberry vinaigrette for arugula or other spicy greens by mixing 1 part Shrub and 1 part vinegar to 3 parts olive oil. Season with salt and pepper. For dessert, drizzle a small amount over any good quality vanilla ice cream. You can also bottle the Shrub and store it in the fridge for up to 6 months. The longer it sits, the more the sweetness and tartness mellows out.
