1 tsp Soy Sauce
1-1½ lbs Daikon Radish
1½ tsp Chili Flakes or Paste
3½ Tbsp Neutral Oil
½ tsp Ginger, freshly grated
½ tsp Sea Salt
½ tsp Sugar
Preheat oven to 475 degrees and adjust rack to center.
Cut ¼-inch off top and bottom of daikon to create a flat base. Slice daikon into sections 3-inches long and ¼-inch thick and then again into sticks about ¼-inch thick. Lay slices on baking sheet and set aside.
In small bowl, combine oil, chili flakes or paste, soy sauce, ginger, sugar, and sea salt.
Drizzle mixture over Daikon fries and toss until evenly coated. Spread in single layer on baking sheet.
Place in oven and roast 30 minutes, until golden brown on all sides, flipping halfway through.
Serve with your favorite dipping sauce.
