1 Acorn Squash cut in half, seeds removed
1⁄2 tsp Grated Fresh Ginger
2 Tbsp Olive Oil
2 Tbsp Soy Sauce
3 Tbsp Maple Syrup
Black Pepper
Sea Salt
Adjust oven rack to lower middle position and heat oven to 400 degrees.
Brush oil over surface of rimmed baking sheet and cut sides of squash.
Place squash, cut side down, on baking sheet. Roast 40-50 minutes, until fork inserted into squash meets no resistance.
Stir together maple syrup, soy sauce, and ginger.
Fifteen minutes before squash is finished cooking, flip it cut side up and brush with soy maple glaze. Drizzle some extra glaze into cavity. Return squash to oven and cook 5 minutes longer, until maple mixture begins to caramelize.
