1 Garlic Clove
1 bunch Asparagus
2 cups fresh Cilantro
2 tsp Maple Syrup or Honey
4 oz Salad Greens
¼ cup Lime Juice
½ cup Olive Oil
½ tsp Sea Salt
½ tsp ground Coriander
In a food processor, place cilantro, garlic, lime juice, maple syrup, coriander and sea salt and pulse to combine. With blade running, pour in olive oil and process until smooth. Season with sea salt and pepper, to taste.
Working with 1 asparagus spear at a time, use a vegetable peeler to shave spears into long, thin shavings. Save tips that snap off as spears get thinner.
Toss asparagus shavings, tips and salad greens with cilantro dressing; and serve.
