1 Scallion, minced
12 oz Green Beans
2 Tbsp Sesame Oil
2 cloves Garlic, sliced thinly
6 oz Shiitake Mushrooms or Oyster, sliced

Sea Salt
Bring medium pot water to boil. Place green beans in boiling water and cook 3 minutes. Drain and run under cold water 1 minute. Set aside.
Heat 1 tablespoon oil in large skillet, add garlic slices, and cook until golden brown and crispy. Remove garlic from hot pan and add sliced mushrooms. Sauté over medium-high flame 7 minutes, until brown and crispy. Add more oil, if needed. Season with sea salt and pepper, to taste. Remove mushrooms from pan and set aside. Add another tablespoon oil to pan along with blanched string beans. Sauté 5 minutes. Plate green beans and top with crispy mushrooms, garlic, and minced scallions.
