1 Tbsp. Cooking Oil
1 Tbsp. White Vinegar
1 cup Flour
1 cup Milk
1 head Purple Cauliflower, trimmed and cut into florets
1 pound Sweet Potatoes, cut into fries
1/2 cup Butter, melted
1/2 cup Sour Cream
2 ounces Capital Hot Sauce
4 ounces Point Reyes Original Bleu, crumbled

Preheat the oven to 425 degrees. Toss together the sweet potatoes and the oil along with a pinch of salt. Place on a lightly oiled baking sheet, then into the oven. Bake for 40 minutes, turning once, until crisp. Meanwhile, in a large mixing bowl, whisk together the flour and milk with a pinch of salt and pepper until smooth. Coat the cauliflower evenly, shaking off any excess. Place onto a lightly oiled baking sheet. Bake for 20 minutes, until tender and browned.
To make the bleu cheese sauce, whisk together the bleu cheese along with the sour cream and white vinegar. Season with salt and pepper and place in the refrigerator until ready to use.
When the fries and cauliflower wings are done, whisk together the hot sauce and melted butter in a small bowl. Serve the cauliflower topped with the hot sauce alongside the fries and bleu cheese dressing.
