1 Apple, peeled and sliced very thinly
1 Tbsp Butter
1 Tbsp Olive Oil
1 pack Gnocchi
2 ounces Alpine-style cheese, shaved
3 Tbsp Sage, chopped finely

Sea Salt
Bring large pot water with pinch sea salt to boil over high flame. Boil gnocchi 4 minutes, stirring occasionally. Strain and place on towel-lined plate. Pat dry.
In large sauté pan, over medium heat, melt butter. Add sage and stir 30 seconds, until fragrant. Add apples and cook 5 minutes, stirring often, until slightly cooked through. Remove to bowl. In same pan, over medium flame, heat oil until hot. Add gnocchi and cook without moving 3 minutes to brown on one side. Carefully flip gnocchi with spatula and season with pinch sea salt and pepper. Continue to cook 3 minutes until browned on both sides. Add apples and stir to combine. Divide between 2 plates and top with shaved cheese.
