1 lb Carrots, peeled and cut into 2-inch chunks
2 Tbsp Honey
2 Tbsp Olive Oil
2 cloves Garlic, peeled and lightly crushed
3 sprigs Fresh Thyme or 1 tsp Dried
Pepper
Sea Salt
¼ cup Freshly Squeezed Tango Mandarin or Orange Juice
½ Tango Mandarin, sliced, or Orange Zest
Preheat oven to 450 degrees.
Cut carrots diagonally in 1-inch slices. Place carrots, garlic, and thyme on baking sheet and drizzle with olive oil, honey, citrus juice, and zest. Sprinkle with sea salt and pepper and toss to combine. Nestle orange slices among carrots.
Bake 15-20 minutes or until golden and tender.
