1 1/2 cups Cornmeal
1 cup Buttermilk or Milk
1 tsp. Salt
2 Eggs
2 Gala Apples, chopped into 1/4” cubes
2 Tbsp. Honey
4 Tbsp. Butter, melted
¼ cup Sugar
½ Tbsp. Baking Powder
½ cup All Purpose Flour
½ cup Yogurt
Preheat your oven to 375°. Grease a muffin tin. Toss the apples with the honey and put a single layer of apples in the bottom of each muffin well. Combine the cornmeal, flour, sugar, baking powder and salt in a large bowl. In a small bowl whisk together the milk, yogurt and the eggs. Pour the milk and egg mixture into the bowl with the dry ingredients. Add the melted butter. Use a spatula to mix everything together. The batter should be wet enough to pour, but still thick like gruel. Add an additional ¼ cup of milk if you need to. Pour the batter into the muffin tin, covering the apples and dividing the batter evenly. Bake for 20-25 minutes until the tops have begun to brown around the edges and the center has just set. When you touch it, it shouldn’t jiggle. Be careful not to over-bake.
