1 Tbsp. Thyme leaves
1 pound Fingerling Potatoes, cut into quarters
1/2 Tbsp. Olive Oil
4 ounces Raclette Cheese, sliced thinly
Cornichons (optional)
Pepper
Salt
Preheat the oven to 400 degrees. Toss together the potatoes, thyme and olive oil. Season with a pinch of salt and pepper and roast for 30-35 minutes. Cover with the raclette and return to the oven until the cheese is completely melted, about 10 minutes. Season with salt and pepper to taste and garnish with cornichons.
