1 Onion, chopped
1/2 cup Heavy Cream or Coconut Milk
1/2 tsp Cumin
1/4 tsp Fresh Thyme, minced (optional)
1/4 tsp Ground Nutmeg
2 - 3 cups Vegetable Stock
2 Garlic Cloves, minced
2 Tbsp Butter
5 cups Broccoli Florets
Freshly Ground Black Pepper
Sea Salt
Melt butter over medium-high heat in soup pot. Add onion and garlic and cook 3 to 5 minutes. Add broccoli florets and cook 3 to 5 minutes more, stirring occasionally. Sprinkle with cumin, thyme, and nutmeg; season to taste. Add vegetable stock, mix well, and bring to simmer. Lower heat to medium and cook 30 to 35 minutes. Purée broccoli with immersion blender until smooth. Alternatively, you can transfer soup to blender and pulse in batches. Pour in cream or coconut milk and give another pulse until combined well. Adjust seasoning and heat another 3 to 5 minutes.
