1 Tbsp Sherry
2 cups Fresh Cranberries
2 tsp Orange zest
Sprig of Rosemary or Thyme
½ cup Fresh Orange Juice
⅓ cup Sugar
Mix sugar and orange juice in pot, and place over low heat until sugar dissolves.
Add cranberries, zest, Sherry, and rosemary or thyme. Bring to quick boil; then reduce heat and simmer. Berries will eventually 'pop,' releasing their juice.
After 10 minutes, remove from heat. Sauce will thicken as it cools. Store in covered container.
