1 Tbsp Balsamic Vinegar
1 lb Lemon Cucumber, sliced
1 pint Cherry Tomatoes, halved
1 tsp Honey (optional, for added sweetness)
2 Ripe Peaches, sliced
2 Tbsp Extra-Virgin Olive Oil
Black Pepper
Sea Salt
¼ Red Onion, thinly sliced
¼ cup Crumbled Feta Cheese (optional)
¼ cup Fresh Basil Leaves, torn
In large salad bowl, combine halved cherry tomatoes, sliced peaches, lemon cucumber, red onion, and torn basil leaves. If using, sprinkle crumbled feta over top.
In small bowl, whisk together extra-virgin olive oil, balsamic vinegar, and honey (if desired) to make dressing. Season with sea salt and pepper, to taste.
Pour dressing over ingredients in bowl and gently toss until salad is well-coated.
Taste and adjust seasoning with more sea salt and pepper, if needed.
Let salad sit a few minutes to allow flavors to meld together.
Serve Cherry Tomato Peach Cucumber Salad chilled or at room temperature as a refreshing and vibrant side dish to complement any summer meal
