1 Scallion, sliced
1 Tbsp Soy Sauce
1 bunch Bok Choy, roughly chopped
1 lb Carrots, julienned
1 tsp Hot Sauce (optional)
1 tsp Minced Garlic
3 Tbsp Neutral Oil
6 oz Shiitake or Cremini Mushrooms, thinly sliced
Sesame Seeds (optional)
½ tsp Minced Ginger
Heat oil over medium high heat. Add garlic, carrots, and ¼ cup water to steam carrots slightly. Once water evaporates, sauté 3-4 minutes. Then, add mushrooms and bok choy and continue to sauté.
Add ginger, soy sauce, and hot sauce and cook 5-7 minutes or until veggies reach desired consistency.
Remove from heat and sprinkle with scallions and sesame seeds, if desired.
