1 Red Onion, cut in half and thinly sliced
1 Tbsp Olive Oil
1 Tbsp Orange Zest
1 lb Beets, scrubbed clean
1 tsp Sea Salt
1/4 cup Freshly Squeezed Orange Juice
1/4 cup Packed Fresh Mint Leaves, roughly chopped
2 tsp Cumin
In large pot, bring enough water to cover beets to boil. Add beets and simmer 35-40 minutes until tender enough to be pierced with a fork. Remove from pot and allow to cool completely. While running under cold water, remove skins from beets using a peeler. Cut beets into 2-inch pieces and set aside.
In small bowl, combine orange juice, olive oil, cumin, and sea salt. Stir well; set aside.
In large bowl, combine beets, fresh mint, sliced onions, and dressing and toss until everything is mixed together. Top with more fresh herbs; serve.
