Nit Noi Provisions is a Connecticut-based food company founded by husband and wife North and Jillian Shutsharawan, whose dumplings and recipes draw directly from North's Thai family cooking. The business traces back to a family gathering in Bangkok and a recipe belonging to North's grandmother, known as Khun Yai, whose chicken broth with rice noodles and Thai herbs became the foundation of what Nit Noi makes today. The Shutsharawans brought their cooking to the Westport Farmers Market in 2016 before opening a kitchen in Norwalk, where the operation has since grown into a wholesale-focused production facility.
Now producing frozen dumplings for restaurants, specialty retailers, and foodservice partners across the Northeast, Nit Noi operates on a clean-ingredient, small-batch model with systems built for consistent quality at scale. The name means "a little bit" in Thai, a phrase that reflects the company's roots in simple, from-scratch cooking.
