Local yellow nectarines, a round stone fruit with a smooth, fuzz-free skin and juicy, tart flesh that's part of the same family as peaches, cherries, and plums. Nectarines are genetically nearly identical to peaches, differing by a single recessive gene that suppresses the fuzzy skin, and yellow-fleshed varieties tend to run tarter and less sweet than their white-fleshed counterparts. The fruit is semi-clingstone, meaning the pit clings somewhat to the flesh but still separates easily enough to slice around by hand. Eat them fresh out of hand, slice into a summer salad with arugula and shaved parmesan, or halve and grill lightly to bring out their sugars alongside pork or grilled chicken.
