Though green spring onions pop-up in the spring, as their name implies, these sweeter red spring onions come a little later in the season, and as a result are a bit bigger than the green variety, with an actual onion bulb at the bottom. The whole plant is edible though, with the green tops being great for garnishes, and the bulbous bottoms being good as either a raw onion topper or a cooked addition to your meals. Try them grilled or saute them as the base for your next sauce!
