Fresh local red raspberries, grown at Hurd Orchards in Holley, New York, a seventh-generation fruit farm on the Erie Canal in Western New York. Raspberries form as clusters of tiny drupelets around the plant's stem, and pull away whole once ripe, leaving the hollow center that gives the berry its shape. They hold up well raw, tossed into salads or blended into smoothies, and cook down easily for sauces, jam, or a quick berry compote. Hurd Orchards grows red raspberries alongside black and purple varieties, along with currants and golden raspberries in smaller batches. Pairs well with lemon, mint, dark chocolate, and fresh cream.
