Local organic Sun Peach cherry tomatoes, a deep pink cherry variety bred as a sister to Sun Gold, with the same signature sweetness but less of the tang and acidity. The fruit ripens through a distinctive color sequence, starting pale green, passing through a soft peach blush, and finishing a rosy cherry pink, which is where the variety gets its name. Borne on long trusses, the tomatoes have a thin, crack-resistant skin that holds up well through a full season of heavy yields. Eat them raw, halved into a salad or scattered whole over flatbread, or drop them into a hot pan with a little oil until the skins blister and burst into a quick pan sauce. They also roast well at high heat until they collapse down, and hold their shape on the grill threaded onto skewers with other summer vegetables. Pairs well with basil, mozzarella, and a drizzle of good olive oil.
