Fresh local organic Little Gem lettuce, a small heirloom variety with tight, glossy heads about the size of a fist and crisp, sweet hearts. Little Gem originated in England in the mid-1800s as a cross between romaine and butterhead lettuce, and it's known in France as Sucrine, meaning sugar, for its naturally sweet flavor. The compact heads are dense enough to halve lengthwise and serve as a single portion, a presentation common in French and Mediterranean cooking. Good served whole or halved with a simple vinaigrette, grilled briefly and dressed with lemon, or torn into a Caesar salad in place of standard romaine. Pairs well with lemon, parmesan, anchovy, and olive oil.
