Similar to your garden variety English thyme in looks, lemon thyme tastes pretty different, in that instead of the bitter edge of thyme, it just tastes like lemons. Use this herb anywhere you would use lemon, lemon juice or zest. Chop and add to marinades for chicken or fish or mix with salt, pepper and oil on roasted fingerling potatoes. Fresh leaves can be added to green salads or fruit salads for a hint of citrus. We also love the strong lemon flavor in baked goods, like shortbread cookies, lemon bars, or scones. Infuse syrups, vinegar, and ice creams with Lemon thyme, straining the liquid to remove the stems and leaves before using.
