Local, fresh organic Fairytale eggplant, a miniature variety with slender, lavender-and-white striped skin and a mild, sweet flavor with few seeds. Fairytale eggplant was bred specifically for its small size and thin skin, which means no bitterness to salt out and no peeling required before cooking. It won an All-America Selections award in 2005, recognized for combining the flavor of a full-size eggplant with a quicker-cooking, more tender form. The thin skin softens fully in just a few minutes of heat, so the eggplants hold their shape when roasted or grilled whole, halved, or sliced lengthwise.
