In the allium family, chives have a bright, fresh green-flavor, mildly oniony with hints of garlic. Chives were made for brightening up creamy dishes, like potato salad, potatoes in butter, or on top of sour cream as a dip or for topping potatoes. Really, chives and potatoes are best friends. You can also make great compound butters or herbed cheeses with chives. Sprinkle anywhere you want a bright green boost in flavor.
