How come we always seem so attracted to melon when the summer rolls around? Well, one reason is that it’s peak melon season, so the melons are at their sweetest and most delicious. But really, it’s because melons are about 90% water. This means that they are great hydrators and a wonderfully refreshing substitute for some of the endless amounts of water you need to guzzle when it’s hot out. Cantaloupes, in particular, also pack a one-two nutritional punch of beta carotene and vitamin C which keep you healthy in the heat. Wrap pieces in prosciutto; make a cold melon soup; and if you don’t want to waste any melon, pickle the rind and roast the seeds!
