Woodlawn Creamery's Rupert is a raw, aged, Alpine-style cow's milk cheese made in Pawlet, Vermont. Produced using milk from the farm's seventh-generation herd of Holstein cows, this washed-rind cheese ages for at least six months. The recipe, originally from Consider Bardwell Farm, is now crafted entirely as a farmstead cheese by Woodlawn Creamery. Rupert features a firm texture, an earthy rind, and a golden paste. It contains flavor notes of broth, bacon, and toasted nuts, alongside a mild sweetness and slight fruitiness. This cheese melts smoothly for hot sandwiches, gratins, and warm dishes. It also serves as a slicing cheese for charcuterie boards, pairing directly with cured meats, mustard, and pickles.
