This organically grown broccolini is a slender vegetable with long, tender stems and small florets, milder and sweeter compared to broccoli, without the bitter edge. The stem and floret are both edible, and the stems need no peeling. It was developed in Japan and crossed the Pacific under the placeholder name "Asparation", for its asparagus-like shape, before gaining the catchier name it carries today.
It cooks fast: sauté whole stalks in olive oil and garlic until bright green and tender, roast it at high heat, or blanch it briefly for salads. It pairs especially well with garlic, lemon, chili flakes, and parmesan.
