This organically grown Caraflex cabbage is a small, cone-shaped cabbage with tender, thin leaves and a sweet, mild flavor, a world apart from a standard round cabbage's bite. Its pointed shape has earned it playful nicknames like sugarloaf and gnome cabbage, and that shape comes from a pointed-cabbage tradition long popular in Germany and Northern Europe, only recently catching on here.
The thin leaves are tender enough to shred raw into slaws and salads, or cook it quickly, braised or sautéed, since it turns tender fast. It pairs especially well with apple, caraway, bacon, and vinegar.
