Fresh local organic white cucumbers, pale ivory to cream-colored on the outside with the same crisp, mild flesh as a standard cucumber. White skin in cucumbers comes from a recessive gene, and heirloom white varieties, most famously White Wonder, have been grown in American gardens since the 1890s. The thin skin doesn't need peeling and carries little to none of the bitterness found in some green-skinned cucumbers. Good sliced into salads, layered onto sandwiches, or served simply with salt and a squeeze of lemon. Pairs well with dill, mint, and yogurt.
