Berkshire pork brings a richness to the blend that sets it apart from conventional andouille. Use it as the backbone of a gumbo or jambalaya, cook it down with peppers and onions, or slice and grill it alongside mustard and pickled vegetables.
We source whole animals through our farm partners, meaning we commit to an entire hog at a time rather than just selecting popular cuts. This approach ensures minimal waste, supports sustainable farming, and honors the full value of the animal. However, it also means that the supply of each individual cut is naturally limited.
