Valencia oranges are the summer orange, the variety that ripens through the warm months after the rest of the orange season ends. They are built for juice: thin-skinned, nearly seedless, and among the juiciest of all oranges, with a balanced sweet-tart flavor. At the juicer they have a clear edge over navel oranges, whose juice turns bitter within hours, while Valencia juice keeps its flavor, which made this the standard juicing orange. The name honors Valencia, Spain, but the variety is Californian, developed in the mid-1800s. In summer heat the skin can pick up a faint green tinge while the inside stays fully ripe, so color says little about sweetness. Juice them, eat them out of hand, or slice them into salads. They pair especially well with fennel, olives, almonds, and dark chocolate.
