1 Large or 2 small Sweet potatoes, peeled and cut into cubes

1 box Zucca Pasta

1 cup freshly grated Parmesan cheese

1 medium red onion, cut into wedges

1 tsp crushed Red Pepper Flakes

1 yellow onion, diced

2 Tbsp Dijon mustard

2 Tbsp Olive Oil

2 cups Kale, stems removed and roughly chopped

4 Tbsp White Distilled Vinegar

4 cloves garlic, roughly chopped

Juice of 1/2 a lemon

½ - ¾ cups Olive Oil
