Yuzu is a fragrant, tart citrus fruit prized for its complex aroma and bright, floral flavor. Roughly the size of a small tangerine, it has a thick, uneven rind and large seeds. Though it’s rarely eaten out of hand, yuzu shines for its juice and zest, which combine notes of lemon, lime, and grapefruit with a distinctly perfumed edge.
Common in Japanese and Korean cuisine, yuzu adds a refreshing lift to dressings, marinades, sauces, and desserts—or can be used to make ponzu, cocktails, and preserves. Its intensely aromatic peel also makes it popular in baking and infusions.
