White sweet potatoes are a great middle point between orange sweet potatoes and your typical russet potatoes. With less sweetness and a less pronounced look than orange sweet potatoes, white sweet potatoes transition well between sweet and savory dishes, and make a more convincing substitute for white potatoes.
