Wellfleet oysters are east coast oysters harvested from the waters around Cape Cod. They tend to be elongated in shape with a strong shell, and are plump and clean, with a creamy-sweet, briny flavor balance. The eastern shore waters of the U.S. have high salinity, which yields oysters with a cleaner, sharper flavor. Additionally, because oysters are flavored by what they feed on, the unique mix of nutrients and local species of phytoplankton in the waters around Cape Cod contribute to the Wellfleet's balanced, refreshing flavor.
