    These hearty greens are the tops of turnips and have a delicious peppery zing that makes them a great, lively sub in for your standard greens like spinach or kale. Because of their sturdy texture, they hold up super well to long cooking times, making them great in southern style greens dishes with bacon, butter, or vinegar, but they also do great cooked into quiches, stews, or stir fries. We recommend cooking them, as they are a bit too tough to eat when raw.
