These sugar plums are not to be mistaken with the sugar plum fairy! The thin snappy purplish skin encases a firm yet juicy flesh that holds a central pit that is easily removed. When raw, the pulp is a greenish amber color, but turns a deep shade of fuchsia when cooked. The dense texture of the aptly named sugar plum is full of rich, complex, and appropriately sweet flavors that deepen as the fruit ripens. Great for eating out of hand; as a dessert ingredient; processed into a preserve; or added to sweet and savory salads. Complimentary flavors include vanilla, nutmeg, tropical fruits, chocolate, butter, and citrus. For a balanced flavor experience, pair with savory flavors like goat cheese, chiles, basil, bacon, lamb, and even grilled seafood such as shrimp and scallops.
