Sudachi are like smaller Yuzu with fewer seeds, with a rind that is more delicate, thin, and edible. These citrus are incredibly juicy, producing more juice than a lime whilst being smaller than a typical lime. The juice is very acidic but super flavorful, similar to that of a lemon, and is used to flavor beverages, desserts, or ponzu sauce. In Japan, sudachi juice is used like vinegar in cooking, and it is very common to serve a slice of sudachi alongside fish, mushrooms, soba, or udon.
