Also known as zucchini flowers, these are a specialty this time of year. These flowers grow on the tops of all squash, not just zucchini plants. These delicate blossoms are delicious when they are tempura battered and fried and/or try stuffed with ricotta and goat cheese and herbs.

Line a storage container with a linen cloth or paper towel and mist it until just damp. Lay out the flowers in single layers, leaving space between the blossoms. Store in the fridge for up to two days, but use as soon as possible.
