Small Sweet Potatoes

These sweet potatoes are simply sweet potatoes that were harvested at a smaller size--about 1/2 to 3/4lbs each--or were planted too close together so they never grew to the large size we are used to seeing--about 1 to 1.5lbs each. As opposed to their larger counterparts, these sweet potatoes are more uniformly soft and sweet on the insides and cook even quicker making for delectable weeknight dinners. Steam, smash, and fry or bake for crispy smashed sweet potatoes; roast and drizzle with hot honey; top with maple syrup, yogurt, and nuts for breakfast.
