Fresh local, organically grown Red Gem lettuce, a compact romaine-type variety descended from the sweet, crisp Sucrine lettuces long grown in France and Spain. The small, elongated heads form densely packed leaves in layered rosettes, tightly furled near the base and loosening toward the top, where the ruffled edges deepen into shades of maroon and red-brown while the interior stays pale green. Because it's a "gem" type, bred small and slow to bolt, it delivers the crisp crunch of romaine at a fraction of the size, with a sweeter flavor and none of the bitterness that can develop in larger heads. The color, texture, and small size make it a striking base for a composed salad, while its firm structure also holds up on the grill or under a quick sear, a technique chefs often use to bring out its natural sweetness. Halve or quarter the heads, or separate into whole leaves as edible cups. Pairs well with citrus vinaigrette, shaved parmesan, toasted nuts, and grilled stone fruit.
