Small and slender with bright pink stalks, pink celery is highly aromatic, more pungent in taste, and smaller in size than European celery. This heirloom variety of celery originated in China, where it is valued for its cooling and anti-inflammatory properties. Not commercially grown here in the US, we are getting this special treat from small family farms within the Lancaster Farm Fresh Cooperative in Lancaster, PA. Due to its strong flavor, most do not like raw pink celery, but some enjoy its robust herbal taste as a garnish or topping for a grain bowl. The flavor really shines, however, when pickled, stir-fried, or braised, allowing the natural sweetness to come out and compliment its herby edge--we particularly recommend it as an accompaniment to meat or any other umami rich dish.
