Fresh Peach Pie donut peaches, a flat heirloom variety with golden yellow skin and flesh and only a light dusting of fuzz. Donut peaches take their name from the hole left in the center once the pit is popped out, and this variety, grown by Family Tree Farms, skips the red blush found on most other donut peaches for an all-over golden color. The flavor leans sweet with a bit of tang, closer to peach pie filling than a typical peach, which is how the variety got its name. Good eaten out of hand, sliced into a green salad, or added to a cheese board with ricotta and cherries. Also holds up well baked into pies, cobblers, and galettes.
