We’re excited to announce we teamed up with their culinary team and gourmet meal kits branch off, Eleven Madison Home, to bring you some exciting bundles this summer season.

Summer is the perfect season for cooking with friends and family and spending time outdoors. This kit comes with all the foundations for a shareable paella, including a Spicy Tomato Sofrito, our Saffron Tomato Broth, and traditional Spanish Bomba Rice. All you need to do is add your favorite seasonal vegetables — we encourage you to get creative and try a range of different combinations throughout the year.

Recipe

Ingredients:

1⁄4 cup extra virgin olive oil

1 cup Bomba Paella Rice

1 cup Sofrito

4 cups Saffron Tomato Broth, hot

Rainbow carrots, peeled and sliced

Fava beans, picked and double shucked

Lion’s mane mushrooms, chopped into large pieces

  1. To prepare your Saffron Tomato broth, follow the directions on the back of the packet. Once it’s ready, strain the broth, discard the spices, and return it to the stove on a low heat. Our kit makes four quarts, so you can reserve the remaining broth to enjoy later.
  2. Heat 1⁄4 cup of olive oil in a large skillet or paella pan over medium heat, and cook the mushrooms until golden brown. For an aromatic punch, add a dash oil to the pan.
  3. Add the carrots to the pan, and sauté for about two minutes.
  4. Stir in the rice and toast it until it is fragrant and opaque. Add the sofrito and stir well to combine.
  5. Add ⅓ of the hot Saffron Tomato Broth and simmer, stirring it gently and occasionally to allow the rice to cook evenly.
  6. When the broth has fully absorbed into the rice, add another ⅓ of the broth and continue to simmer, shaking the pan gently to keep the rice from sticking to the bottom.
  7. Once the broth has fully absorbed into the rice again, add the last ⅓ of the broth along with the fava beans, spreading them evenly over the surface of the rice.
  8. Continue to cook the rice until the liquid has reduced completely. The rice will begin to caramelize at the bottom of the pan. You will notice a slightly higher-pitched crackling sound when it’s done. You can peek slightly by moving a bit of the rice at the bottom of the pan to ensure it doesn’t burn.
  9. Remove the rice from the heat and allow it to rest for 5 minutes.
