Lentil Soup

This earthy and hearty lentil soup has bright notes of lemon and herbs that elevate this protein and fiber rich vegan staple to another level. Top with grated Parmesan or an herby gremolata; add some Italian sausage (or vegan sausage) to make a rich, stew like meal; serve along with some crusty bread and white beans or a bruschetta.

Place in fridge if eating within 24 hrs. Otherwise, store in the freezer until ready to use. Can heat from frozen or thawed.
