Hidden Rose are a natural hybrid apple first discovered growing wild in the Pacific Northwest around 1960. The variety was never cultivated commercially until a few years ago. Hidden Rose are tart and mildly sweet, with a distinctive strawberry-lemonade flavor. They cut open to reveal vibrant pink or salmon-colored flesh. The apple's unique colored flesh is best showcased raw and thinly sliced. Eat with sweet or savory spreads, robust cheeses or as an edible garnish to liven up any dish. If you want to bake with Hidden Rose apples you won't be disappointed. Though the color will fade, the bright, tart flavor and firm texture holds up in cooking.
