Fresh local green shiso, a fragrant Japanese herb in the mint family with broad, slightly serrated leaves and a flavor often described as a cross between basil, mint, and citrus. The same plant produces a purple-leafed variety used to dye pickled plums and ginger a deep red-pink. The leaves are delicate and best added at the last minute, since heat mutes their aroma quickly. Use whole leaves to wrap rice, grilled meat, or fish, shred them into salads and slaws, or blend into dressings and pestos for a bright, herbal note. Pairs well with rice, sesame, ginger, and raw fish.
