Although garlic doesn’t flower, the plant does produce stalks when left to mature in the ground. These stalks are what we know as delicious garlic scapes. Not to be confused with green garlic, which is young baby garlic that seasons in the spring, these unique stems have a grassy, nutty flavor and are an early summer delight. You can use them anywhere you’d use scallions, green onions or green garlic to impart a super fresh, green, garlicky flavor. Grill whole and serve with fish; blitz into a pesto for pasta salad; pickle; blend into a green goddess dressing; top a pizza with mozzarella and cherry tomatoes. Just trim off tops and you’re ready to go!
